Protein Pumpkin Bread

The most delicious pumpkin bread made with Pumpkin Spice Latte protein powder! A delicious high protein breakfast option with a streusel crumble on top

Ingredients

Dry

  • 3 Scoops Pumpkin Spice Latte level-1 protein
  • 1 Cup almond flour
  • 1 tsp baking soda
  • 4 tsp stevia
  • 1 dash salt, nutmeg, pumpkin pie spice, cinnamon

Wet

  • 1 Cup Pumpkin puree
  • 6 tbsp egg whites
  • 1 dash vanilla extract

Streusel

  • 3/4 Scoop PSL level-1 protein
  • 1/4 + 1/8 C Almond Flour
  • 1.5 TBSP Sugar
  • 1 tsp cinnamon, nutmeg, pumpkin pie spice
  • 2 TBSP Cold butter

Instructions

  • Preheat oven to 350
  • Mix the dry, wet and streusel ingredients separately in 3 bowls.
  • Add the dry ingredients into the wet and fold together.
  • Spray banana bread pan so the loaf doesn't stick
  • Pour batter into the pan
  • Top with streusel
  • Bake for 40-45 minutes (or until the inside is baked completely through)
